The madam was going to tour us the brewery and show us how to pair food. ... lectured us the process of making Balsamico. He was very good presentation and everything he Showed us and told us was extremely interesting. Then he recomended three examples of usage of Balsamico. All of them tasted great. They also have cookbook in English as well as Q code shows us the cooking book. We really appreciate the CEO to be very kind for us and answering all the questions as well as pick up at the station.
This tour was one of the best things we did on our trip to Italy. It is a stunning old farmhouse compound that the city grew up against. And Nonna was so personal and enriching, with the process for TRADITIONAL balsamic vinegar very educational. I would most highly recommend scheduling this tour if your interests at all lie in this direction.
This is for sure a unique experience in every sense. Never had I imagined that I would be drinking balsamic vinegar on a spoon. We arrived at Il Borgio del Balsamico by car since it’s the easiest and fastest way to get there. Cristina, one of the owners of the business greeted us at the entrance of the property. The house was amazing and looked exactly like one of those boutique ancient Italian villas. The garden was really nice too, with roses exotic flowers, and even fruit trees everywhere. With Cristina as our guide, we toured the house where her family actually lives in. She showed us the offices from where they run the business. But the last floor was the real jewel of the house. It is this floor where the family keeps the balsamic vinegar stored in wooden barrels for around 15 years before it goes to the market. Cristina’s family has been in this business for over 70 years and their brand is one of the leading ones when it comes to high end balsamic vinegar. The process of making balsamic vinegar is really interesting and captivating since the vinegar can remain stored for up to 50 years before it is ready to be sold. As with wine, the longer the vinegar spends in the wooden barrels, the higher the quality. After a thorough explanation of the production process, including its history and many interesting details, we went downstairs for the tasting. Cristina made us try some of the lighter options first and left the best award winner balsamic for the end. We tried five different vinegars and I can say that each one of them tasted completely different. Cristina also explained us the variety of uses you can give to each of the options. The experience itself was amazing and unique, definitely one of a kind. The perfect way to immerse yourself in the Italian culture and it’s flavours!

We booked with Travelling Spoon and had an excellent time with our host Giovanna. We booked the combined experience - to see the markets and hear some local insight and history, and then return with Giovanna to her home to cook and eat together. It really was the highlight of our long weekend in Bologna. Giovanna and her daughters were a delight - funny, interesting, kind, and they made us feel very welcome. Giovanna taught us several dishes and showed us the best places to get food in Bologna. She was thoughtful about constructing a menu around the dietary needs of my friend and made sure we could all experience some traditional cooking. We had a great time drinking, cooking and talking together and learnt a few skills at the same time. We were so stuffed with food we could have rolled ourselves home, and there was enough leftovers for us to take home. For us this was the perfect experience, to cook with Italians in an Italian home, and afterwards we knew which shops and market stalls to return to. Brilliant.
Massimo and Federica are the warmest hosts and take care of every detail of the experience... their lovely appartment is beautifully decorated and most welcoming... the table is set and received us with summer colors and all the elements we would need along the steps of the complete dinner...conversation is friendly and supplies information on Rome’s past, traditional cuisine and all the typical ingredients.... when it comes to food, Massimo is just the perfect chef, powered by family learned skills and all the intention of making the best of the night...Creamy ricotta, intense cherry tomatoes, peperoni with tuna, the best pecorino and prosciutto... and to round up those amazing flavors, a remarkable white wine: a great discovery for us and for Bavarian bishop Johannes Defuc back in the year 1111.After this unsurmountable “antipasti”, we found Pepino’s carbonara with local guanciale .... simply great, as only Italian grandparents can create. Perfect chiannina polpete and faggiolini followed, si soft and tasty !!! Red wine matched this explosion of flavors and enhaced delicious food.My Dad had a memourable birthday cake, so his 80’s in Rome won’t be forgotten: tante auguri Pappo! Let me start by saying how moved and taken away we were by our experience. Gio is an Italian treasure and we absolutely adored our experience with her. She is kind and knowledgeable and patient. The finished product of whatever yummy meal you cook with her guidance will reflect that. Absolutely strongly recommend a cooking class with her. Only disclaimer is I advice you make sure whatever third party company you use to book gives you her contact info upfront. We had a hard time reaching out to the company but as soon as they gave me her contact she responded immediately and was so kind and so helpful. We made a risotto amongst other delicious dishes, I will never forget it. I can’t recommend this experience enough, book a cooking class with Gio you will not regret it! Also she has the cutest Jack Russell named Nemo and I miss him already!
Cristina and her husband were wonderful hosts for my wife and I. We made fresh dough from scratch, prepared a variety of toppings and baked a number of delicious pies! They also provided some local beer, moscato, and a traditional Sicilian dessert. This was an amazing experience, we spent hours eating and sharing our cultures. Highly recommended!

Pio was a great host and teacher... he obviously loves cooking and sharing it with others. My husband is a novice to the cooking... considering toast a huge culinary victory. I understand cooking and enjoy it but am by no means a master. Pio worked well with both of us. We took time to watch his demonstration and then both mixed our own dough... we kneaded, rolled and stretched all with conversation and paced for our learning. I loved watching my husband learn to roll the tortellini around his fingers. We also made tagliatelle. We learned about other pasta shapes and sizes. While we cooked we learned more about Pio and the town. He showed us the ragu he had cooked prior to our arrival and explained the simple sauce of sage and olive oil he would use for our other dish. Dinner was a nice time with a simple starter and our pastas... we were surprised by a main protein entree and then a great dessert. Pio sat and shared with us as our wine and conversation continued. All in all it was one of my favorite memories in Italy... I hope to see Pio again and I hope to share the pasta and sauces with friends here in Arizona. Thanks Pio!!!

She is very knowledgeable about the city of Florence, and we learned a lot from her about some of the more recent history of the city and the stores. Cooking with Cinzia was a lot of fun! She catered to our vegetarian diet, and we prepared tagliatelle and ravioli from scratch. We also had a delicious eggplant, mozzarella, and fresh pesto dish, as well as a scrumptious panna cotta. The private setting made it more enjoyable than being in a big group with people you don’t know. Definitely recommend trying this private tour and cooking class with Cinzia!

He was a wonderful teacher and taught me and my partner so much about the Italian cuisine and the small but quite important elements to the Italian cuisine. The kitchen atmosphere and panoramic views were a delight and then dining on our completed dishes was truly a dream come true! Very Dolce Vita!!! Grazie for a true highlight culinary experience. Three friends who all consider ourselves good cooks all learned new skills, and unlearned things we’ve done badly for many years. Chef Giorgia is an inspiration, instilling an appreciation for the culture, climate, and history of Tuscany and Tuscan cuisine. We made pasta, a rich sauce, a lovely panzanella salad, and the best-ever tiramisu (I tried tiramisu almost every day all over Italy for 4 weeks at different venues...ours was best). All this was accomplished while munching on Tuscan bread cubes dipped in flavorful herbed olive oil, and sipping wine from the local Cesani vineyard. The views from their charming farmhouse include the gorgeous agricultural countryside (olive groves and vineyards galore) as well as the walled, many-towered hilltop town of San Gimignano. Giorgia is knowledgable, helpful, fun, and became a friend the moment we met. You can’t have a better time anywhere.

We had an amazing time with Chiara. She was incredibly gracious, and she was a wonderful teacher. She started the lesson by giving us a brief historical introduction to Roman cuisine. We cooked multiple types of pastas, while about local produce, ingredient selection and cooking techniques. She was flexible with the menu, and even served us a delicious apperitivo as we prepared our meal. The dinner was fabulous. Throughout dinner we talked about Roman food and it’s regional variations - and why this makes Italy centered on the culinary experience. We had an amazing evening with Maria Cristina. Maria picked us up at the Sant’Ambrogio market in Florence and whisked us away to her beautiful Tuscan villa which is rich with history. We opted for the cooking experience with Maria Cristina through Traveling Spoon. Maria has renovated the entire home, sticking to the historic design throughout. We enjoyed every moment with Maria, who is a true renaissance woman with numerous varied talents. The delicious meal we prepared was made with the freshest ingredients. I need to be gluten free so Maria took every precaution to make sure everything was gluten free or avoided cross contamination. The best part was how much fun we had getting to know Maria. We all had many laughs and stories to share. Maria even packed up leftovers for us to enjoy at our Airbnb. We are still talking about how amazing this experience was. I highly recommend Maria Cristina for a true local culinary experience in Tuscany.
Ilaria was the most beautiful host, she is very warm and welcoming and very easy to understand for us non-Italiano's :-) My husband, daughter and I were lucky enough to arrive at the farm for the cheese tasting when the farmers were in the process of making some cheese so were able to watch and learn about the process, as well as sampling some of their delicious wares. On to Ilaria's gorgeous home for the cooking class and we all agreed, 100/10 to Ilaria for this experience. Delicious yet simple to make food, excellent vermentino (and I don't even like wine normally but had to buy a bottle to take with us it was so delicious) and amazing history in her small hamlet (10 inhabitants!). We've seen "the David", mercato centrale, uffizi, the leather shops, luxury shops, the beautiful city of Firenze. Enjoyed meals at all the best restaurants.. By far our favorite experience in Firenze was Antonella's cooking class with dinner. Antonella was the most gracious host. Her demeanor gave us a family like sense of comfort. Her knowledge, professionalism and love of cooking was clearly evident within the first 15 minutes. The food was simply amazing! It's a MUST try. Very highly recommend...we will be back.
We had so much fun with Silvia in the hand-rolled pasta class! She made the experience so much fun, taught us a lot about the history of the dish, and helped us with our (poor) Italian. We will definitely take another class with her!
AMAZING!!!! Would give this 10 stars if we could!! My wife & I thoroughly enjoyed our experience with Mirella and Stefano. It started with the both of them taking us on a tour of the Sant’Ambrogio food market, where they told us fascinating details about the market and vendors. This is where they picked up the ingredients for the menu we were to cook a bit later in the day. This market tour was a fascinating & entertaining way to start the experience! We then got to cooking, during which my wife and I could not stop smiling. It started with two different forms of bruschetta, both of which turned out DELICIOUS. Then, we made handmade tagliatelle pasta with Tuscan ragu. WOW, just wow. The next thing we prepared for the menu was chicken cacciatore. Sooooo wonderful, tender, and flavorful. Finally, we prepared homemade tiramisu. It was every bit as tasty & amazing as it sounds! Throughout the food prepping and cooking, Mirella & Stefano gave us the perfect combination of talking us through it, assisting hands-on if needed, and informing us about the fascinating history behind each dish. The time passed so quickly, as we were having the time of our lives! When it came time to eat, Stefano served us each course. The food all came out INCREDIBLE and it was amongst the best meals we had throughout our entire week in Florence! Stefano & Mirella’s kindness and courtesy made us feel like we were family. This was our first full day in Italy (our first experience in all of Europe, in fact!) and we can’t stop talking about this experience. We get so welcomed & appreciated by Stefano and Mirella. We would highly recommend this experience to just about anybody, regardless of culinary interest. For all of the fascinating things you’ll learn about Tuscan food & history, you’ll also feel like you just had an amazing get-together with new friends! Thank you, Stefano & Mirella. The next time we make it out to Florence, we will absolutely sign up for another class. Oh, and one more thing: Mirella handed us a printout of our entire menu, with detailed instructions of how to prepare each item! And we’ve done a lot of them, across Europe, Asia, Africa, etc. This was really an unforgettable experience for us. Francesca welcoming us into her home and teaching us so much about the region and local food. The food you make in classes like this is usually pretty good, but here it was amazing - really next level , “oh my god this is good” quality food. It was also a lot of fun to taste a couple Lambrusco, some homemade liqueur, and a couple other snacks in between main courses. Worth every penny and a whole lot more, not just because it’s enough food for lunch and dinner. We will be sending a lot of our friends to come visit Francesca and take her class!
Patrizia was lovely and, like any true Italian, very easy to talk to. We covered a wide variety of topics beyond just cooking during our morning together. I have been to the markets in Florence many times – I even give tours to students – and I learned SO much from her. She really REALLY knows her stuff. The market people knew her and let us try some of the items and it felt very authentic to basically decide what we were going to eat on the spot, based on what looked good, and then head home with our bounty… I LOVED making the pasta. I really so enjoyed that. I have seen it done so many times and realized I never really got to do it myself. The whole process is so satisfying and as Patrizia said, which I now completely agree with, there’s cooking and then there’s making pasta. They really are two different things. Making pasta is like knitting. It is therapeutic and relaxing. We talked about cooking but in the way you do with your favorite aunt, mixed with life lessons and little Italian sayings and tid-bits – one of my favorite things Patrizia told me is that when you make pasta there is a certain flour/egg ratio and you almost always make an amount that uses 4 eggs. That is just a good standard size, not too little and not too much. So people used to say instead of “Oh I am making fresh pasta tonight for dinner” they would say, “I am making 4 eggs of pasta!” Patrizia was just lovely. I am now fully invested in getting a pasta maker at home!

This experience exceeded my expectations! From the initial meeting with Nicola and his mother Lia and hanging out in their lovely home, they made us feel like family. Antonio received us and showed us the neighborhood. He walked us to see a very nice view of a cliff. Then we came back to the house and he introduced his family. His sister Rosanna was the one in charge of the pasta making class. Antonio was also involved in this part because he’s the one who speaks English better. The pasta class was very fun and we were really proud of what we accomplished. We felt really at home meeting the entire family and chatting while the food was being prepared. While we were waiting for the pasta, we had the chance to taste the amazing cold meats they make in the farm and also we were invited to try the wines the host makes. The food was amazing! Everything was really fresh and you could tell that all the veggies were grown at home! Definitely recommend.
The experience with Daniela was fantastic, she was very welcoming and made the recipes accessible if you did not have much cooking experience. The dishes were thoughtful and absolutely delicious! Daniela was extremely knowledgeable and even was able to explain which ingredients you could use from your region (in our case, United States) if the authentic Italian ingredients she used were not accessible. Our group was able to learn new skills, enjoy a delicious meal, appreciate the hospitality of a Roman local and make many new memories and laughs along the way. I would highly recommend this experience!
Passion for food and the joy of cooking! The only thing that eclipsed the beautiful villa we explored and cooked in was the food itself. Constanza is incredibly knowledgeable and an excellent teacher who made sure to discuss the how and why along with the what for everything we did. It was a perfect mix of explanation, demonstration, and practice that resulted in a meal and dining experience that topped the best restaurants in Florence. My wife and I were joined with two families, one with children, and the kitchen became a wonderful community with our host accommodating us all. We left with our stomachs and hearts full and with an renewed appreciation for quality ingredients that make excellent food and the joy that should come with cooking.
