Traditional Bolognese Cooking with a Loving Italian Mother

After touring the old market area in central Bologna we went back and cooked a delicious 3-course supper. I've never really nailed making pasta, let alone filled pasta, so to be guided through it by an expert was great! Giovanna was generous with her time and knowledge, and sharing how she and her family live (very different to our lives in Australia).

We had a great trip and experience with Chiara and her family. It is a bit challenging to find, but certainly worth every minute. Chiara and her team were very welcoming and we enjoyed cooking, eating, drinking and spending time together. Highly recommend making the trip and enjoying the history of the house and family.

Guided Walking Tour of Bologna's Food Market

Local markets are certainly the best way to experience the vibe of a city. It gives you deep-rooted access to the soul of the place, and this is no different n Bologna. Bologna definitely has some of the most freshly sourced food from local fish from the Adriatic to organic vegetables from the farms. The quality of the produce is top-tier and with a little bit of creative ingenuity, each item can be turned into a beautiful gastronomic assemble. Paolo will take you to Mercato delle Erbe, a lively indoor market with stalls selling local produce - fruits, vegetables, meats and cheese. Walk through the market and learn about the local ingredients and its significance in Italian cooking.

Hands-on Traditional Italian Cooking Class in Bologna

We loved going to the market with Giovanna. She told us about Bologna’s history as a medieval city. Filled with groceries, we returned to her house, where we began some meal preparations. We enjoyed antipasto, , official meat tortellini and vegetable made broth, and a delicious risotto with asparagus. She prepared us a simple baked tomato dish, and finally, the delicious tiramisu.. We enjoyed a choice of wines. Great talk, great company and wonderful food in Giovanna’s lovely home. She is a gem.

Bolognese Pasta Making Class in a Pasta Shop

Pio was a great host and teacher... he obviously loves cooking and sharing it with others. My husband is a novice to the cooking... considering toast a huge culinary victory. I understand cooking and enjoy it but am by no means a master. Pio worked well with both of us. We took time to watch his demonstration and then both mixed our own dough... we kneaded, rolled and stretched all with conversation and paced for our learning. I loved watching my husband learn to roll the tortellini around his fingers. We also made tagliatelle. We learned about other pasta shapes and sizes. While we cooked we learned more about Pio and the town. He showed us the ragu he had cooked prior to our arrival and explained the simple sauce of sage and olive oil he would use for our other dish. Dinner was a nice time with a simple starter and our pastas... we were surprised by a main protein entree and then a great dessert. Pio sat and shared with us as our wine and conversation continued. All in all it was one of my favorite memories in Italy... I hope to see Pio again and I hope to share the pasta and sauces with friends here in Arizona. Thanks Pio!!!

Bolognese Cooking in the Historical Center of Bologna

Fun experience! We really enjoyed our time with Margherita! We started the morning off with a coffee and treat overlooking the towers then browsed the market for our cooking ingredients. Back at her apartment Margherita tailored the meal for us vegetarians and it was a casual and informative cooking experience. The food was delicious and we highly recommend.
