Moroccan family recipes with a Marrakech native

It was a pleasure to be hosted by Hind. She was incredibly welcoming, talkative (perfect English!!) and gracious. The meal itself was excellent and she has our highest recommendation. We cooked a very authentic Moroccan meal of various mixed salads and a beef tagine. Hind gave us a tour of the Jemaa el Fnaa square and market beforehand where we enjoyed a fresh squeezed juice. Hind also took us to a separate market to buy fruit and bread. After the cooking we sat down and enjoyed the meal, which was delicious. It was nice to do it at the beginning of our trip as it informed the rest of our trip in terms of many of the dishes we ate and saw on menus. Hind was an excellent overall host and spoke perfect English with minimal accent, which was nice and made it easy to understand her. She gave us a lot of info on Morocco and the food culture as we cooked and helpful pieces of information on techniques and spices, etc. we could incorporate in our own home cooking. Overall I could not recommend her more highly.

Learn to make an authentic tajine from a local in Rabat

Meet your host Tarik at his apartment and walk together ten minutes to the local market as you discuss the day’s menu. Visit an open neighborhood market where locals shop every day and explore with your host local and regional spices, fruits and vegetables used in Moroccan cooking. You may even purchase a few ingredients that you will use during your cooking class after the market tour. Your market tour will last about 45 minutes after which you will walk back together to Tarik's apartment for your cooking class.

Home cooked Moroccan meal with a professional chef and licensed guide

We chose Fouzia and Mohamed as our hosts, and it was truly a fantastic decision. They are incredibly friendly individuals who welcomed us into their home as if we were old friends. Mohamed seamlessly translated everything for us in English. We requested a vegetarian menu and asked for an additional main course, and they accommodated our requests without any hesitation. Their hospitality and warmth made our experience memorable and enjoyable. It felt like dining with family rather. Without a doubt, we would give Fouzia and Mohamed a perfect rating of 5 out of 5 stars. We highly recommend them to anyone looking for an exceptional cooking experience filled with warmth, good conversation, and delicious food.

Authentic Moroccan home-cooking in Casablanca

I have taken cooking classes in Italy, France, Spain, and now Casablanca....by far the most fun and informative was with Chamsi in Casablanca. She is DELIGHTFUL, and not only took us to the food market, but also to the old souk, out to breakfast near the old fortress, around the city to see the beautiful mosque by the sea, to purchase Ramadan treats at a wonderful bakery, and of course to her home to prepare an awesome and delicious meal. She patiently answered our questions and introduced us to her favorite vendors where we sampled olives, spices, and fresh fruit. We couldn't have had a more wonderful time with anyone else!

Authentic Moroccan cooking class in Casablanca

Maria is THE best! I had a long layover in Casablanca, so I decided to try a cooking class with Maria before flying back to the US. And I am SOOOO glad that I did. Maria tailored the class to cook exactly what I requested, and then added a seasonal option to boot! Maha lives in a simple apartment in Hay Riad with her husband, children - Sara, Amine and Malak, and their cute furry cat, Felix. She will introduce you to traditional Moroccan dishes – these are simple, everyday meals that you will find at every Moroccan family's dinner table. Also if you have a specific request for a dish you have tried or seen somewhere and want to taste, please let Maha know in advance and she is happy to customize the menu for you! A few dishes you will be sharing with Maha and her family at the table are zaalouk (a Moroccan salad of cooked eggplants and tomatoes) or Taktouka (a traditional Moroccan savory dish and spread made from tomatoes, bell peppers, garlic, toasted paprika and olive oil), tagine (stew made with meats or fish or vegetables that is braised in a gently spiced sauce and cooked in an earthen pot) and fruit salad (using seasonal fruits).

I love Edwina, which is not easy for me to admit. she's vivacious, witty, and an amazing teacher. The way she interacts with you to translate cooking techniques makes it so easy to learn. There were moments when she had us taste the food and decide what flavor we thought was missing. It was a complete hands-on experience that allowed us to use all of our senses. Everyone who loves food, but is afraid to enter the kitchen, needs to learn with Edwina. Actually, everyone should just cook with Edwina.
