I had the chance to enjoy a full experience with Edwina and Hansa - market visit, cooking class and meal. After a warm welcome by Edwina, we started discussing the menu. She was flexible, suggesting the dishes but allowing me to decide or adjust the meal. We then started preparing the market list in English and Arabic so that I could participate in the shopping process. That was a plus. Spending the day with Edwina is also a great opportunity to discover her beautiful riad, a peaceful haven on a quiet side street of the busy Marrakech Medina. I had a great time and learned a lot! I had got up very early that morning and driven a long way, so the riad was the perfect place to relax while spending a wonderful time cooking.
I have taken cooking classes in Italy, France, Spain, and now Casablanca....by far the most fun and informative was with Chamsi in Casablanca. She is DELIGHTFUL, and not only took us to the food market, but also to the old souk, out to breakfast near the old fortress, around the city to see the beautiful mosque by the sea, to purchase Ramadan treats at a wonderful bakery, and of course to her home to prepare an awesome and delicious meal. She patiently answered our questions and introduced us to her favorite vendors where we sampled olives, spices, and fresh fruit. We couldn't have had a more wonderful time with anyone else!
It was a pleasure to be hosted by Hind. She was incredibly welcoming, talkative (perfect English!!) and gracious. The meal itself was excellent and she has our highest recommendation. We cooked a very authentic Moroccan meal of various mixed salads and a beef tagine. Hind gave us a tour of the Jemaa el Fnaa square and market beforehand where we enjoyed a fresh squeezed juice. Hind also took us to a separate market to buy fruit and bread. After the cooking we sat down and enjoyed the meal, which was delicious. It was nice to do it at the beginning of our trip as it informed the rest of our trip in terms of many of the dishes we ate and saw on menus. Hind was an excellent overall host and spoke perfect English with minimal accent, which was nice and made it easy to understand her. She gave us a lot of info on Morocco and the food culture as we cooked and helpful pieces of information on techniques and spices, etc. we could incorporate in our own home cooking. Overall I could not recommend her more highly.
Manuela has been in the tourism industry for a while and now owns her own Riad. You will fly with her in the bustling streets of the Mellah and hit the market with local people. You will meet authentic vendors that are really welcoming. The Riad is simply amazing with an interior garden and dining area. All decorated with Moroccan arts and crafts. You can also enjoy the terrace while the food is cooking. The food was so fresh and delicious. Aicha, the chef, will explain to you the regional cuisine and different spices and how to use them. If you want to enjoy 'la dolce vita' type of experience, in a Moroccan way, this is for you!
Meet your host Tarik at his apartment and walk together ten minutes to the local market as you discuss the day’s menu. Visit an open neighborhood market where locals shop every day and explore with your host local and regional spices, fruits and vegetables used in Moroccan cooking. You may even purchase a few ingredients that you will use during your cooking class after the market tour. Your market tour will last about 45 minutes after which you will walk back together to Tarik's apartment for your cooking class.
Entering Maria's world of cooking is entering the world of Moroccan Classic gastronomy. Her home is well decorated and the food is prepared in a very refined way. The food was presented in an elegant living room and she was very welcoming. During the cooking class, I loved how she talked about her childhood memories related to food and family. We ate a variety of salads and tagines (wild chicken was my favorite!) and fresh oranges with cinnamon. If you want an authentic cooking experience with Moroccan family, I would highly recommend Maria!

We chose Fouzia and Mohamed as our hosts, and it was truly a fantastic decision. They are incredibly friendly individuals who welcomed us into their home as if we were old friends.
