Meet Youssouf

Youssouf is a software consultant, tennis player and animal rescuer in Casablanca. His wife, Giselle, is an art teacher at Casablanca American School and an animal rescuer as well. Together they enjoy traveling, cooking and hosting people at home. Youssouf’s loves experimenting in the kitchen, he is influenced by ingredients and cooking techniques he picks up when he travels and enjoys mixing different flavors and textures to create something unique. Apart from cooking, he also loves making cocktails and has a huge variety of infused rum with local spices such as cinnamon, vanilla, star anise and even cherries and berries when in season. Through this experience, Youssouf and Giselle would like to introduce you to the local produce of Morocco from the olive oil to the spices to the honey, the fruits and vegetables.

What to expect

Please note menu might vary. If there are particular dishes you are interested in trying, please include your request in the booking form.

In-home meal (1 - 6 guests) Join Youssouf and Giselle in their modern Moroccan apartment in Greentown, which is beautifully decorated with traditional furniture. They share their home with six cats and two rescued dogs, Halston and Marylin. They are excited to welcome you to their home, give you a glimpse of their everyday lives, share stories of living in Morocco and share with you a traditional Moroccan meal. A few dishes that you might try at Youssouf and Giselle's home are Moroccan lentils or zaalouk (smoked eggplant salad) or taktouka (Moroccan salad made with tomatoes, smoked peppers and garlic), Moroccan meatballs or baby chicken with saffron and preserved lemon sauce and olives or vegetarian tajine with seasonal vegetables and seasonal fruit salad with a touch of orange blossom. Enjoy your meal with a glass of Moroccan wine or a cocktail with infused rum or a mocktail and a homemade limoncello.

Cooking experience (1 - 6 guests) Roll up your sleeves and join Youssouf in his home kitchen to learn to prepare a few traditional Moroccan dishes with a twist. In your Casablanca cooking class, you will learn to make 2 dishes from scratch - an appetizer and a main dish. Which you will later enjoy with your hosts. You can expect the cooking lesson to last about 1.5 hours.

Market visit (1 - 6 guests) Meet Youssouf at your hotel before you drive together to the Maarif market. This is a local market with stalls selling fresh fruits and vegetables, spices, olives, fish, meat, and everything else you need to prepare a Moroccan meal at home. Walk through the market with Youssouf while he introduces you to the local produce and meet some of his favorite vendors to buy a few ingredients for your cooking class.

Notes: Youssouf can accommodate lactose free, gluten free, vegetarian and vegan diets, on request. The cost of your experience includes return hotel transfers and a glass of cocktail or wine.
