Isi prepared a delicious feast of seasonal, local produce blending traditional and contemporary cooking styles. She also supplemented the meal with locally produced liqueurs and desserts. It was a fun and informative (and filling) survey of Filipino food past and present.

Join Isaiah for a guided tour of Cartimar in Pasay, one of his favorite local markets. He prefers to start the tour early so that everything is fresh and abundant. Cartimar offers a plethora of ingredients from fresh seafood to live poultry and a wide array of vegetables. After meeting Isaiah at his home, enjoy a short 20-minute drive to the market, where you will be introduced to local produce used in Filipino cuisine, interact with vendors and pick fresh, seasonal ingredients for your cooking class. Back home, Isaiah will teach you to cook three traditional Filipino dishes using the ingredients you bought at the market.
The best thing about this experience was that Ken and Kim really know what they're doing. I love the fact that they get things just around their home, fresh seafood from the fisher folks, fresh vegetables and herbs from their organic garden, and they only use natural materials in their resort, even when they are serving the dishes! I love how they take care of their environment, not only do they give back but they respect what Mother Nature offers to them every day, and share that with their guests. I loved everything they served us - VERY DELICIOUS! VERY AUTHENTIC! The cooking class experience was amazing because Ken really shared his cooking skills that he gained from his vast experiences. My most favorite dish was the fresh kilawin (fish ceviche) and the different kinds of vegetable dishes that comes along with all the seafood we grilled in the center of their open kitchen. You can also hear the sound of birds, goats, insects and the waves of the ocean in the background all the time! Everything was perfect! Farm to table at its best!
Meet Isi at her home and then drive for 10-15 minutes to a nearby market. You will either visit the Alfonso or Mahogany Market. The Alfonso Market (about 4-5 km away from Isi's home) is a farmers market that has all the fresh, seasonal fruits and vegetables. The Mahogany Market is a well-known market in Tagaytay (which is nearer Isi's home), here you can find stalls that sell fresh meat. Walk around the market with Isi and stop at her favorite stalls to buy a few ingredients for your cooking class.
