Meet Paolo

Paolo is a certified tour guide passionate about sharing his love for Bologna's history and culture through his guided city tours. Apart from being a certified tour guide, he is also a great pasta maker and an excellent connoisseur of the best places to eat in Bologna! He believes that Italian pasta is the epitome of taste and wants others to experience some of his favorite dishes - lasagna, tortellini in brodo (stuffed pasta in a broth), and tagliatelle al ragù (tagliatelle pasta and a rich ragù made with beef). Paolo has always been passionate about eating and cooking authentic Italian food and learning about the history of his city, and now he wishes to share this passion with travelers!

Cooking experience (1 - 50 guests) Learn to make traditional Bolognese pasta with the freshest local and seasonal ingredients. The cooking class will be a fun, full-immersive experience, where you will learn to make pasta - such as tortellini or lasagna. Paolo will go through the process of molding, working and shaping the pasta dough into authentic pieces of culinary art. After you cook, sit down and share the meal you helped prepare.

Market visit (1 - 50 guests) Local markets are certainly the best way to experience the vibe of a city. It gives you deep-rooted access to the soul of the place, and this is no different n Bologna. Bologna definitely has some of the most freshly sourced food from local fish from the Adriatic to organic vegetables from the farms. The quality of the produce is top-tier and with a little bit of creative ingenuity, each item can be turned into a beautiful gastronomic assemble. Paolo will take you to Mercato delle Erbe, a lively indoor market with stalls selling local produce - fruits, vegetables, meats and cheese. Walk through the market and learn about the local ingredients and its significance in Italian cooking, before walking to Paolo's home for your cooking or meal experience (if you've booked this experience).

Food tour (1 - 50 guests) Join Paolo for a 3-hour guided walking tour of Bologna. During this tour, you will explore the historic center of Bologna and taste delicious Bolognese food and wine. Bologna stands as the crown jewel for art, cuisine and incredible history. Walk around the city center while Paolo explains how the city came to be the way it is today - from Pre-Roman civilizations to Medieval battles to Modern-day. After the walking tour, he will take you to a local Bolognese osteria, where you can fulfill your food cravings with either a curated meat and cheese platter tasting (parmigiano reggiano, pecorino cheese and curated meats such as mortadella, culatello and prosciutto) or a comforting pasta dish (lasagna or tagliatelle al ragù or tortellini in brodo). Enjoy your meal with a glass of local red wine - you can choose between Lambrusco (fizzy) or Sangiovese (smooth). End your tour with a cup of Italian coffee! This tour will be nothing short of exciting, as you immerse yourself in the food, art, and culture of the magical city of Bologna.
