After working in kitchens across Canada, Spain, and Norway, he returned to Mexico to reconnect with his roots. Now based in Puerto Vallarta, Manu works as a private chef and loves sharing authentic Mexican food and culture with travelers. He welcomes guests to his charming home near the city center, where he teaches hands-on cooking and offers insight into Mexico’s vibrant culinary traditions. Manu can accommodate all dietary needs and is always happy to recommend the best local spots for tacos al pastor, aguachile, pozole, and more. "This was a great experience for us! We met Manu at the market where we selected fresh ingredients for our lunch. After shopping, he drove us to his home and showed us how to make delicious green salsa, Chicken Enchiladas with red sauce and Mahi Mahi with Vera Cruz style sauce. We loved Manu’s laid back approach to creating authentic Mexican dishes using the freshest ingredients. Just natural, locally sourced items made the foods light and healthy."

"I am vegetarian and my husband is not and Chef Manu tailored to both of us. We started at the most intimate market where Chef Manu knew all the vendors and walked us through all the options of food there was. He asked about our likes, dislikes, food aversions and we came up with a coconut ceviche for me, a sea bass ceviche for my husband, and an oyster mushroom dish as well (in addition to two types of salsas). I expressed interest in a particular coconut dessert as well and Chef Manu went out of his way to another street food vendor and found it for me! We then were welcomed into his home where my husband and I learned so many valuable cooking skills and techniques. The food was AMAZING and we are still dreaming about how great it was. We definitely recommend this experience with the market tour."
