"l love to cook, love Mexican cuisine and was hoping for a culinary experience with a chef from the area who could provide local knowledge and cultural history of the foods we prepared.
Chef Manu delivered!
We added the market experience
to our tour and met Manu at the Farmer's Market Emiliano Zapata. Upon arrival, Manu assessed our food preferences and had a plan for different diets (vegetarian/ vegan, allergies, preferences, etc.) We are omnivores and selected ceviche, aguachile, salsa, and enchiladas with smoked marlin from the many options he provided.
The market experience was amazing for someone who loves food. Manu knew the local venders and joked and visited with them as we selected our ingredients. He taught us how to shop like a local, introduced us to the family vendors, explained produce and ingredients only available in the area.
We visited the pescaderia and selected from freshly caught fish (snapper, parrot, mahi mahi, etc), shrimp, clams. Our last market stop was the tortilaria. Manu explained the process of
nixtamalization and how the tortillitas were
distributed out to food stalls and restaurants across the city. We ate a freshly cooked corn tortilla while the vendor wrapped our order. I'm spoiled now and will resent the cardboard tortillas available stateside.
Manu drove us to his home where my husband and I sat at the kitchen counter while Manu cooked. He shared great tips that are game changers for enhancing the flavor of Mexican cuisine (you'll have to take the class to find out!) I enjoyed being hands on, but this was not expected. Manu was gracious with all my questions and helped improve my knife skills. Throughout the class, he provided cultural insights about regional cuisine and pre-and post colonial culinary practices. He also helped us practice our Spanish.
We ate dishes as they were ready, starting with a smoky tomatillo salsa and chips, followed by ceviche with parrot fish, aguachile with delicate tasting clams, and the enchiladas, filled with the local speciality, smoked marlin.
Manu shared his experience as a chef working around the world from Norway to Toronto. He's a cool guy who also guides mountain biking tours and tacos tastings at PV street food vendors.
I had my Shazam running to grab the killer music playing in the background. We felt very welcome in his home, were able to meet his lovely wife and cute pup.
This experience was the perfect way to get into a PV state of mind. Manu is friendly, knowledgeable and fun to be with. This time was just me and my husband, but I can see coming back with friends or family.
After the class, Manu emailed recipes and made hmisefl available for other travel tips as needed. I'm glad I scheduled this early in our time here because it gave me some confidence to shop for and prepare my own foods like a
