Meet Adrian

Chef Adrian is a warm and fun, multiple-award winning, celebrity chef in Barbados! Adrian’s love and passion for food started when he was ten years old assisting his mother and grandmother in the kitchen. He has since worked at several fine dining establishments (including the Fairmont in Barbados), became the captain of the Trinidad and Tobago National Culinary Team and is considered one of the premier chefs in the Caribbean. Adrian started a company to educate, entertain and elevate Caribbean culture and cuisine, primarily focused on developing children’s culinary skills. Adrian is excited to share his love and passion for Bajan food and cooking with guests from around the world.

Cooking experience (1 - 20 guests) Meet Adrian, an award-winning chef at his cooking studio (and home) for your private, Barbadian cooking class in Bridgetown. Begin your Barbadian culinary journey with an introduction to its cultural and culinary history as Adrian discusses your menu for the day. Learn to cook an authentic, farm-to-table Barbadian meal. As much as possible, Adrian uses fresh, local produce from his vegetable garden or that he purchases from farmer’s markets, whether it's the island's fish, limes or locally made ketchup. Adrian uses recipes passed down through generations in his family but tends to put his own creative touch on the dishes that you will be cooking. During your Bajan hands-on cooking class, learn culinary techniques from how to julienne vegetables and sauté aromatics to stewing chicken and whipping up a cream based sauce. A very encouraging and confidence-inspiring cook, Adrian encourages people to cook based on what you taste, see and smell. You will learn to cook three to four dishes from scratch during your cooking lesson that lasts about 1.5 hours. After cooking, sit down at the table to share the authentic Bajan meal you helped prepare with Adrian. Your menu might include dishes such as a tossed salad or breadfruit salad (seasonal), Bajan macaroni pie with stewed chicken and flying fish and cou cou. Your meal concludes with a dessert and includes wine or beer.

Market visit (1 - 20 guests) Meet Adrian at his home and together drive to Cheapside market in downtown Bridgetown. This is a lively, local, covered market. Walk through the market and explore with your host local and regional produce sold by his favored vendors at the market. You will purchase a few ingredients that you will use during your farm-to-table cooking class after the market tour. You will also visit the local fish market to learn about the island's fish before returning to Adrian's home. Your market tour will last about one hour.
